Menus- stuck to the plan this week

After last week and the lack of planning and cooking, this week has gone pretty well.  The bbq beef on Monday was wonderful!  When I sat down to actually chose the recipe, there were so many and I did not have all the ingredients for any 1 recipe that I decided to just combine them all using the things I had on hand.  So the recipe looked something like this:

BBQ beef sandwiches

  • 3# beef roast
  • 1 onion, chopped
  • 3 T cocktail sauce
  • 1/2 catsup
  • 3 T worcestershire sauce
  • 1 t fresh ground pepper
  • 2 t chili powder

Spray the crockpot with non-stick cooking spray (to aid in clean up).  Place roast in the bottom of the pot.  Put other ingredients on top.  Every hour or so, flip the roast to keep sauces on both sides. Cook on low 8+ hours.  When ready to serve, use a fork or tongs to pull meat apart.  Combine with sauce and serve on hamburger type buns.

We worked outside all day tearing out our old lawn and reseeding with new grass, so this was a wonderful to come it and have dinner just about ready.  Plus it smelled great all day! The only disappointing part was how little was left over!  This is going to be on the menu rotation again.  I am not a huge fan of traditional roast with potatoes and carrots, so we still have quite a few roasts from our cow, but now I have a new favorite for that cut.
