Home made carmel corn- recipe

Fall is here!  And with cooler temps I feel like staying in the kitchen rather than just passing through to somewhere cooler.  Here is what I am baking this afternoon:

Carmel Corn

  • 15 cups popped popcorn (3 bags microwave popcorn)
  • 1 cup packed brown sugar
  • 1/2 cup margarine or butter
  • 1/4 cup light corn syrup
  • 1/2 t salt
  • 1/2 t baking soda

Place popped corn into 2 13″x9″ baking pans, sprayed with non-stick cooking spray.

In 2-qt saucepan heat margarine, brown sugar, corn syrup and salt over medium heat, stirring occasionally, until bubbly.  Continue cooking 5 min without stirring, remove from heat.  Stir in baking soda until foamy.

Pour sugar mixture over popcorn, toss until evenly coated.  Bake 1 hr, 200 degrees, stirring every 20 minutes.

Alternatives:  decrease popcorn and add your favorite nuts or dried fruits.
