Hummus is a protein packed snack and is yummy too. But it can be a bit pricey to purchase regularly, so we make our own. And my starting with dry garbonzo beans or chick peas, it is even cheaper.
Start with a pound of dry chick peas. Cook like other dry beans- I like to use the crock pot. A pound of dry beans yields several cups of cooked beans, so if you are not making humus for a party, freeze some of the beans to use later.
Basic Hummus Recipe
- 1 cup garbanzo beans, drain
- 1/4 cup olive oil
- 1 clove of garlic, chopped
- 2 T lemon juice
- 1/2 t salt
- chopped fresh parsley
In blender or food processor, blend beans and all other ingredients. Blend until smooth, uniform consistency. Spoon into serving dish and serve with parsley.
To add interest or more flavor: add 1/4 t cumin with salt. Omit parsley. Sprinkle with coarse ground pepper. Or add 1/3 cup chopped sun dried tomatoes into blended mixture.
Hummus is best served with pita chips, crackers, or vegetables. Home made pita chips are great.
Cut pita bread into wedges, about 8 per piece. Brush with olive oil and add spices if desired. Bake on a sheet pan, 400 degrees for a few minutes- about 5 or until crispy.
